Professional Interests

The primary mission of Dr. Rao's research is to foster long-term economic benefits for North Dakota and United States through value-added agricultural products. In pursuing this mission, Dr. Rao launched a food biopolymer and ingredient lab and formed a research team to utilize foods and their by-product streams. These include products and by-products from cereal, legumes and oil crops. Two primary research foci currently exist in Dr. Rao’s research program at NDSU.
(1)Improving plant protein functionality.
(2)Development of delivery systems for encapsulation of bioactive ingredients
