In a question on what will be her research interests, Dr. Jin said “Malt is an essential ingredient of beer brewing. The industry is facing a growing gap between demand and production of barley. I am motivated to conduct research by seeking out strategies to increase diversity of grain malt and characteristics and incorporating malt into brewing and other types of beverages. I’m also interested in expanding research at NDSU on food fermentation and improving food safety and quality. These efforts would eventually increase the economic and sustainable returns to growers, industrial producers, and consumers”.
