NDSU dietetic students are planning to recognize American Health Month with a health-conscious menu at 800 Café on Thursday, Feb. 27.
Seating will be from 11 a.m. to 12:15 p.m. in Katherine K. Burgum Family Life Center room 312. Cost is $8 and tickets for a group of four can be purchased for $30. Other healthy lunches will be served each Thursday through May 8 at the same time at 800 Café.
“Our student-named, student-managed 800 Café features meals that are made up of fresh ingredients,” said Sherri Stastny, associate professor in the Department of Health, Nutrition and Exercise Sciences and the instructor for the class restaurant. “Each meal is required to have a minimum amount of plant fiber and we use locally-raised pork or lean chicken, turkey and dairy products to round out a satisfying lunch.”
The Feb. 27 meal will start out with a spicy Tuscan chili with chicken, fresh vegetables and a savory yogurt garnish. The entrée will be chicken salad tossed with crisp apples, avocado, cranberries and feta cheese, and topped with homemade parsley vinaigrette.
The final course is a rich chocolate upside-down cake covered with vanilla yogurt and garnished with raspberries.
The 800 Café is operated by NDSU dietetic students in their junior and senior year. The restaurant serves recipes made from scratch in a full-service dining room. It also serves as a test kitchen for recipe improvement and provides nutrient analysis for consumer-provided nutrition information.
Each meal served has fewer than 800 calories.
