Rosemary Apple Pecan Chicken Salad
The perfect light chicken salad for lunch or a picnic.
Ingredients
- 1 pound boneless, skinless chicken breast, cooled and diced
- 1¼ cups apples, chopped
- ⅓ cup pecans, chopped
- ⅓ cup dried cranberries
Dressing Ingredients
- 1 (5.3-ounce) container fat-free plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon red wine vinegar
- 2½ teaspoons fresh rosemary, finely chopped
- 1 teaspoon Dijon mustard
- ½ teaspoon honey
- ½ teaspoon onion powder
- Salt and fresh ground black pepper (to taste)
Directions
Combine chicken, apples, pecans and cranberries in a large mixing bowl. In a separate, small mixing bowl, stir together dressing ingredients. Season with salt and pepper. Pour dressing over chicken mixture and toss to coat evenly. Serve on lettuce or whole grain bread.
