A delicious summer recipe for all of those zucchini you've been "gifted."

  • 48 zucchini strips (about 2 zucchini)
  • 2 teaspoons olive oil
  • 1 tablespoon garlic, minced
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 2 tablespoons basil, finely chopped
  • Salt and Pepper to taste
  • 1 cup spaghetti sauce
  • ½ cup mozzarella cheese

Directions

Preheat oven to 425 F. Using a vegetable peeler, peel zucchini into wide strips; set aside. Over medium heat, saute olive oil and garlic until fragrant. Add spinach and cook until wilted. Remove from heat and allow to cool. In a large bowl, combine spinach mixture, ricotta and basil. Season with salt and pepper to taste. In a baking dish, pour in spaghetti sauce in even layer on the bottom. Layer 4 strips of zucchini to create a cross pattern. Scoop 2 tablespoons of ricotta mixture in center. Fold zucchini strips to seal in ricotta. Place seam side down in pan. Evenly place zucchini rollups in pan and top with mozzarella cheese. Bake for 15 to 20 minutes or until cheese is golden brown.
