These are just three of many different variations of chili peppers. These also happen to hold lower, middle, and upper grounds for heat. heat with peppers is caused by alkaloid capsaicin. the levels of this can be effected by the temperatures in which the peppers are grown, which is why southern states often produce hotter peppers than northern states.
Beings there is such a wide range of chili peppers i will simply give you the characteristics for identification for the three peppers mentioned above.The jalapeno pepper is usually pciked and consumed when still green and about 5 to 9 cm long.They typically grow in a bush like plant that reaches around 3 ft on average. The heat produced by the jalapeno is no where near the other two peppers above. If allowed to keep growing it turns a distinguished red color. The habanero pepper is small and has a bulb like shape. They are a yellowish orange color when ripe. They are one of the hottest peppers in the world, but also contain a fruity flavor, if one can reach beyond the heat. The ghost pepper is the hottest pepper on eart and has a almost wrinkled texture when ripe. They are red and also have a fruity taste if th eheat can be veered, which in this case, most likely cannot. Touching your eye after handling one of these peppers would be very similar to being struck by pepper spray.
