Our Better Than Basic Muffin recipe is the ideal on-the-go breakfast. This muffin recipe features whole wheat flour to keep you feeling full and energized throughout the morning! Plus you can pick the mix-in, or two that best suits you, whether it’s berries for added antioxidants, shredded zucchini for a touch more fiber or a few chocolate chips to satisfy your sweet tooth!

Whole grains such as whole wheat flour are rich in fiber, B vitamins, antioxidants, minerals. In addition to keeping you feeling full longer, a diet rich in whole grains can reduce the risk of heart disease, stroke, and type 2 diabetes.

Whole-grain foods contain all parts of the wheat kernel — the bran, germ and endosperm. USDA's MyPlate recommends we make half of the grains we consume whole.   • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, at room temperature
  • 2 eggs
  • 1 cup milk
  • 1 tablespoon flavor extract
  • Up to 2 cups of mix-ins (fruit, nuts, vegetables, baking chips)

Directions

Preheat oven to 400°F.  In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the butter with a fork or pastry cutter. Stir in the eggs, milk, and flavor extract until all ingredients are incorporated. Stir in desired mix-ins, but do not over mix. Evenly divide the batter between the prepared muffin cups. Bake for 15 to 20 minutes or until a toothpick inserted in the center comes out clean.
