Meats and Muscle Biology Laboratory

The Meats and Muscle Biology Lab is well equipped for measurement of meat quality and muscle function. Equipment includes: Warner Bratzler shear force machine, clam-shell type cooking grills, thermocouples, Minolta Chroma Meter, HeNe laser for measuring sarcomere length, protein electrophoresis (including 2-dimensional) and immunoblotting equipment, Alpha Innotech gel and blot imaging equipment, and other standard laboratory equipment.
